We present an easy take on a beverage featured on a new cocktail list. It's a large-volume premix that is packed with tastes of the holiday season, rendering it ideal for your holiday party. Reserve the remaining cordial you can use for breakfast cocktails, desserts, or for additional servings of bikinis.

Bikini Recipe

Yields 10 guests

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Put all the ingredients in a saucepan, heat until it reaches a light boil, mixing until the sugar dissolves. Next, turn off the burner allowing it to reach room temperature fully. Decant to a sterilised bottle, close it and refrigerate it chilled, where it will keep for about a month.

To make Cocktail Base: Pour all the liquids in a sizeable container, let it rest for one hour, then filter it preferably using muslin, making it perfectly clear.

To serve: Add 85ml of the premix to a stirring glass filled with ice, and stir carefully for one minute to cool it down. Filter into a chilled martini glass or similar, top with the cranberries and finish using a brief mist of the essential oil over the drink.
